Recipe for Coconut Rum Ball Cookies

Coconut rum ball cookies

This recipe is very simple to do, especially if you have access to fresh coconuts.
The cookies have a nice chewy texture and a nice coconut flavor!

You will need:

coconut rum ball cookie dough
3/4  Cup Organic Virgin Coconut Oil

1 3/4 cup all-purpose flour

1/4 cup sugar

1/4 cup Coconut Rum*

1 3/4  shredded coconut - unsweetened (fresh is preferable)


If coconut oil is a solid, then in a mixing bowl beat coconut oil with an electric mixer on medium to high speed until  softened.  Add about half the flour, the sugar, and the coconut rum - beat till thoroughly combined.  Stir in remaining flour.   Blend in shredded coconut by hand.

Shape about 1 tsp of the mix into a ball.  Place on un-greased cookie sheet.  Bake in 325 degree oven 20 minutes or till bottoms are lightly browned.  Remove; cool a few minutes.

Makes 42 Cookies.


* I use Captain Morgan Coconut Rum - it has a very nice coconut flavor.  If you don’t have Coconut rum, you can substitute regular rum or even water.
